Cocktails pair perfectly with a BBQ or a lazy day by the pool. While you may have a favorite beer to drink or wine to sip on, mixing things up with a fabulous cocktail with your friends might be just what your summer is missing.

 

Just in time for the 4th of July next weekend, here are awesome cocktails you can easily serve up in batches and serve to guests for a great way to cool off!

 

 

Watermelon Tequila (foodandwine.com)

Watermelon Tequila: This recipe makes about eight cups of watermelon tequila. The blueberries and lime are what really give this cocktail the fresh summer flavor, and the mint gives it a cool kick that perfect for cooling down on a hot day! This recipe does require you to set it in the fridge for a couple hours, so be sure to prepare this in advance!

1/4 cup water
1/4 cup granulated sugar
8 cups diced seedless watermelon (1 pound)
1/4 cup fresh lime juice
1 3/4 cups blueberries
3/4 cup lightly packed fresh mint leaves, plus 8 sprigs for garnish
1 1/4 cups silver tequila
Ice

 

First, you need to make some simple syrup. In a small saucepan, bring water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved, about one minute; set aside to let the sugar syrup cool.

 

In a blender, puree the watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.

 

In a large pitcher, combine the sugar syrup with the lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle the blueberries and mint. Add the watermelon juice and tequila. Refrigerate until chilled, about two hours.
Pour the cocktail into tall ice-filled glasses. Garnish with the mint sprigs and serve.

 

 

Strawberry Mojito (tablefortwoblog.com)

Strawberry Mojito: A perfect cocktail to make in a pitcher and pour out for guests. This recipe makes enough for four cups of strawberry mojitos that are about 210 calories with no fat, no sodium, and two grams of fiber!

11 oz. strawberries, hulled (2 3/4 cups)
1/3 cup fresh lime juice
1/4 cup granulated sugar
10 large fresh mint leaves (plus more for garnish)
1 cup white rum
1 cup sparkling water
Lime wedges or fresh strawberries for garnish

 

In a medium pitcher, combine the strawberries, lime juice, sugar, and mint leaves and crush with a muddler or wooden spoon until the sugar is dissolved, about one minute.

Next, add the rum and stir gently, so as not to muddle the leaves and strawberries too much. Divide the mojito among four glasses, and top each with about a quarter cup of sparkling water. Garnish with mint sprigs, lime wedges, or strawberries.

 

 

Peach-Basil Margarita (finecooking.com)

Peach-Basil Margarita: This is the perfect cocktail for those that something with a little more of a kick than the above recipes (and still only 210 calories). The peach liqueur is what give it the perfect peach flavor, but it tastes even better if people eat the peach which sipping on the cocktail. This recipe is for two cocktails. Just double the recipe for a bigger batch!

6 large fresh basil leaves, plus small sprigs for garnish
2 Tbs. fresh lemon juice
2 fl. oz. (4 Tbs.) peach liqueur
3 fl. oz. (6 Tbs.) silver tequila
2 slices ripe peach

 

Put the large basil leaves, lemon juice, and peach liqueur into a cocktail shaker or mixing glass. Crush ingredients with a muddler or the end of a wooden spoon for about 10 seconds to release the flavor from the basil.

Next, add the tequila and enough ice cubes to fill the shaker three quarters of the way full, then shake for about 20 seconds. Strain into a rocks glass over fresh ice, and garnish with the peach slice and basil, if you would like.
